Tainan splits into two halves that feel like different cities. West Central holds the old capital: Chihkan Tower, the Confucius Temple and lanes narrow enough to lose a morning in. Anping sits about five kilometres west on the coast, with the two forts, the tree house and the canal.
Most visitors give the old city a full day and Anping a half. The bus between them takes roughly half an hour and costs nothing for the first eight kilometres with an EasyCard or iPASS, which covers the trip; a taxi does it in fifteen minutes or so.
One day in Tainan means the old city and little else, and that is a perfectly good day. Two adds Anping and the coast. Three is the first length that lets you reach the salt flats, the hot springs or Alishan without spending the whole time in transit.
What falls off first is always the coast, then the inland districts. If the trip is short, keep the old city and the night market that opens that night, and leave Qigu and Guanziling for a return visit.
Tainan's night markets do not all open every night, and turning up on the wrong evening is the single most common way to waste one. Garden opens Thursday to Sunday, Wusheng on Wednesday, Friday and Saturday, Dadong on Monday, Tuesday and Friday. Friday is the only night all three big outdoor markets run together, and Siaobei, which is indoors, opens every day.
Tainan's night markets run on rotation, and which one opens depends on the day of the week, so a fixed address is the wrong thing to plan around. The stalls take walk-ins and nothing on this site sells entry to one. What a guided evening does solve is the part that stops visitors going in at all: no English signage, an unwritten order of eating, and a bill you cannot see coming. The Confucius Temple, the Grand Matsu Temple, the Altar of Heaven and Kaiyuan Temple all cost nothing to enter, and so do Shennong Street, the Anping lanes and every night market in the city.
There is no free walking tour operating in Tainan, so a guided introduction means a paid one. The forts and museums that do charge are mostly NT$70, which is roughly two US dollars.
North and west of the city the land flattens into salt pans, fish farms and lagoon, and it is closer than most visitors expect: Qigu is under an hour out. Inland, the ground rises to the hot springs at Guanziling and the mango country at Yujing, both within about fifty kilometres.

Tainan's busiest months are January and February, not summer, which surprises most people. The pull is the temple pilgrimage season rather than the weather, though the weather agrees: winter here is the dry, comfortable half of the year, and August is the wettest month by a wide margin.
Tainan's busiest month is January, and its second busiest is February.
